• We keep waste out of landfill - soon 90% of our waste will be recycled, reused or composted
• We choose 'green' electricity 
• 90% of the fresh food we use is grown locally
• We recycle everything from paper, glass and plastic, to egg cartons, corks and candle wax
• We compost nine tonnes of food scraps each month
• We give preference to suppliers with 'green' credentials
• Our staff propagate and plant native trees for a bushland regeneration project - and we run a worm farm
